I chose the Barbarella eggplant for this recipe, first for its shape and size; cut lengthwise from the stem it makes it’s own one-person portion and isn’t it cute plated? I kept this recipe vegetarian in favor of the applaud for more veggie options on the Isador’s “At night” menu.
Of course, you can go rogue and add some ground beef or pork sausage. Perhaps you could do a chicken parmesan stuffed eggplant, or, a curried lamb. Have fun with your food when cooking!
